My garden is overflowing with cherry tomatoes, and I love it! These colorful cherry tomatoes are called, Sunrise Bubble Bee. I bought these seeds a few years ago, and they produce so much fruit every year!
I use the cherry tomatoes in everything; salads, quiches, and pasta salads! I recently tried a new pasta salad incorporating the cherry tomatoes, along with cucumber, onion, olives and sausage. All mixed with a balsamic garlic dressing. The salad is even better the next day! :)
I am on a Thai inspired food kick lately, there is just something about mixing veggies and nuts on top of a salad! :)
This salad combines a homemade dressing, with sliced veggies on top of chopped kale. Simple, quick and a great meal prep salad for the week! After a day, the kale soaks in the dressing, making it even better! Enjoy!
I LOVE salads, I eat them everyday for lunch... but sometimes you need to mix it up with something different! This week I will be making a Thai inspired vegetable salad. This salad mixes chopped cabbage, red peppers, cucumbers, green onions... all topped with homemade peanut sauce!
