My summer of lunch salads have finally come to a close for the season. I love salads, but sometimes eating them everyday becomes boring, and in the fall or winter I want something warm!
Quinoa is the base of most of my lunch bowls; it fills you up (plant based protein and fiber) and is easy to mix anything into it! This recipe mixes quinoa + lentils with peppers, almonds, raisins and green onions. Sprinkled with chopped cilantro and fresh lime juice…. YUM!
The yellow color comes from the spice, turmeric. Turmeric is one great way to treat muscle pains and inflammation :) This recipe makes 4 servings, perfect for lunch the whole week!
