Sunday = meal prep day! I am a huge planner, especially when it comes to my food for the week. I try to prep my breakfast and lunches on Sunday so I am able to grab the meals and go during the week.
This quinoa bowl is one of my 'go to' recipes to make ahead for an entire week, the recipe makes up to four days worth of lunches! I enjoy eating the bowl cold, garnished with cilantro and fresh squeed lime juice. YUM!
